Chaozhou: Guangji Bridge

When visitors go to Chaozhou, the residents would encourage them to see Guangji Bridge. They say, "If you have not visited Guangji Bridge, you have not been to Chaozhou.

I brought my husband to take a look at the most famous attraction in Chaozhou. This old bridge crosses the Han River. The 518 m arch bridge with 18 pavilions has a unique architectural style and eighteen floating boats connecting the bridge in the middle.

The 18 floating boats are "stored away" every evening and “brought back” the next morning. When the bridge is open, there is a channel for ships and boats to get across. We were lucky to witness the closing of the channel one morning. (Watch video)

In the evenings, two laser light displays are scheduled at Guangji Bridge. It is a spectacular show. I recommend going for the first show at 8 pm, sometimes the 2nd show is cancelled without notice.

There was heavy rain on the day we visited Guangji Bridge, it did not deter us. We had fun in the rain.

潮州：广济桥

到潮不到桥，枉费走一遭，说的就是广济桥，潮州最出名的景点。

走在这古桥上，十八梭船廿四洲的独特格局，让我们赞赏和惊叹

这座旅游观光步行桥全长518米，横卧在滚滚的韩江之上。桥中有 “十八梭船”的启闭式浮桥，桥上有12座楼阁和18座亭屋，并加上匾额与对联，两边景色壮丽迷人。

每天晚上，18艘浮船会被开走，以便船只可以通过。早上，18艘浮船再开回来。

有天早上，我们很幸运地看到了这一幕。 （请看视频）

晚上有两场灯光秀，蛮好看的，建议尽量赶看第一场。因为有时候第二场会被取消，不会预先通知。我分别拍了白天和晚上的广济桥情景。

当天在游广济桥时，突然下起倾盆大雨。难得遇到狂风暴雨，我们在雨中，还是玩得很开心 非常值得来一趟的景点。

Teochew Festival 2016 《潮州节2016》

Teochew Festival 2016 was officially opened by Minister for Health, Mr Gan Kim Yong this morning. Organised by Teochew Poit Ip Huay Kuan, the 10-day festival is held at Sands Expo and Convention Centre (Level 1, Hall A) from 9 to 18 Dec. Opening hours from 10.30 am to 9.00 pm daily.

Teochew opera lovers can watch daily performances by Xiaomeihua Opera Troupe from Jieyang and local arts group Nam Hwa Opera Limited.

Besides watching cultural performances, visitors can explore the Cultural Gallery and 3 zones - Food Zone, and Teochew Delicacy Zone and Handicraft Zone.

At the Cultural Gallery where some of these artefacts are loaned from the Museum of Overseas Chinese Remittance in Shantou, I have a quick look at the history of the pioneer Teochew immigrants.

The most crowded place at the festival is the Food Zone. The small food street features 20 vendors comprising local Teochew eateries, as well as food vendors from Shantou and Chaozhou.

Teochew specialities such as bak kut teh, Teochew glutinous rice roll, soon kueh, bak zhang, crystal dumplings, fried kway teow with kailan, beef balls and fried oyster omelette are available daily.

At the Teochew Delicacy Zone, taste some tea and take a look at the large variety of fish maw brought in by a Shantou company.

Watch a peanut brittle demonstration by 77-year-old Master Chua who has more than 60 years of experience making traditional Teochew snacks.

Then there's the delicious teng cang popiah (Teochew sweet spring roll) which cost S$10 for 3 rolls!

At the Handicraft Zone, I watched a live demonstration of oil paper lantern by master craftsman Mr Tan who is from Chenghai. Also on display are the beautiful, golden silk embroidery works and exquisite wood carvings.

To encourage cashless transactions, only NETS payment is accepted at the fair.

Entrance tickets are priced at $10 each. The ticket holder can enjoy a $3 rebate when they make purchases at the Food Zone and Teochew Delicacy Zone.

I didn't make any purchases at this festival because the products sold are too expensive and they do not captivate me, including the Teochew food. Entrance fees to the festival doubled this year, I was expecting a better event with more interesting vendors but it is really disappointing. I bought 2 tickets but used only one. It's not worth paying S$10 if you only want to have a look-see.

《潮州节2016》

YMCA Silver Fiesta 2016 @Toa Payoh Hub YMCA银发乐龄2016年嘉年华活动

Experienced a fun and hilarious bus ride on the way to a morning breakfast gathering with a group of Hainanese at Kim Keat Palms. We boarded the wrong shuttle bus (number 235) and went "eat wind" (for a ride), causing us to be late for half an hour. hahaha....

On a positive note, we found some interesting places on the long ride. And to reward us for being present : good food and good company which cheered us up tremendously.

After a sumptuous breakfast, I boarded shuttle bus number 238 to Toa Payoh Central to support my Teochew sisters who were performing Teochew opera excerpts at YMCA Silver Fiesta 2016 @Toa Payoh Hub.

Before their performance commenced, I went round to mingle with our seniors and check out the activities. There were quite a number of young volunteers looking after the senior citizens and keeping them company at some activities.

This senior citizen wowed the audience with her rendition of English oldies. I was impressed with her guitar playing.

There were some game stalls and craft-making classes for participants. Some participants tried their hands at bead crafting with the help of young volunteers.

I'm pretty impressed with the art pieces made by them. They get to keep their artworks.

There was a photo booth and a long queue has formed in front of it. The seniors love to take pictures. When I pointed my camera at some of them, they gave me their most beautiful smiles.  :)

The participants were having fun and enjoying themselves. Many collected some cute prizes and door gifts. A pity I could not stay long as I had to leave for another appointment after the Teochew opera performance.


今早与海南乡亲们在大巴窑7巷小贩中心一起吃早餐后, 就去大巴窑中心支持我的潮州姐妹们。她们在YMCA银发乐龄2016年嘉年华活动中, 表演了一段潮剧《穆贵英招亲》。

嘉年华现场还提供乐龄文康休闲活动, 他们可以免费参加许多趣味性游戏或学做手工, 还有礼物拿。我很高兴看到好多青年志愿者细心照顾、陪伴乐龄人士们玩游戏。大家都相处得很愉快, 玩得开心。

Salted Fish Fried Rice 咸鱼炒饭

Went marketing at Geylang Serai wet market and met a Teochew brother who owns a dried goods stall. After buying some dried chillies and pig skins, saw the lovely salted fish and couldn't resist getting a small slab of it.

I love salted fish. Thinking of what dishes I am going to cook with it makes me drool big time. One day, my son wanted fried rice so I made a salted fish fried rice and he finished the plate of rice (picture above) all by himself.

Salted Fish Fried Rice

300g of steamed white rice
a piece of salted fish fillet (4 cm by 2 cm) soaked for 10 minutes and diced
some shrimps (can use chicken meat or pork)
some bean sprouts
2 eggs
1 small onion (chopped)
2 cloves garlic (chopped)
red chilli and spring onion for garnishing
fish sauce
pepper

Method :

Fry an omelette and cut it into small pieces.

Heat 2 tbsp oil in wok, add chopped onions and stir-fry until onions turn translucent, push it to one side of the wok, then fry the garlic. Before garlic browns, add the diced salted fish to fry for 3 minutes, then add the shrimps, bean sprouts and steamed rice. Toss to mix the ingredients well and stir fry for 3 minutes.

As the preserved fish is salty, taste the rice first before adding in the seasoning.

Add the egg, fish sauce and pepper. Stir fry for another 1 minute before serving.


那天在芽龙士乃巴刹遇到一位卖干粮的潮州宗亲, 就向他买了一些干粮和一片咸鱼。接下来的日子, 随时都可以用咸鱼做菜。这天儿子要吃炒饭, 刚好家里有隔夜饭, 就做了这道简单的咸鱼炒饭。

家里有隔夜饭的话, 我不会浪费它, 最常做的不是炒饭就是煮粥了。而让我们母子百吃不厌的家常美食就是咸鱼炒饭。

喜欢这道炒饭, 可能与我喜欢咸鱼有关, 制作方法也简单。每当吃到咸鱼时，原本味道普通的炒饭顿时会变得又咸又香哦。

Singapore's Youngest Teochew Opera Performer Goh Wee Ann 新加坡年龄最小的潮剧演员

Life has not changed much for Singapore's youngest Teochew opera performer Goh Wee Ann since she burst into the limelight in June this year. I caught up with the family when I went to watch them perform on 2nd July at Marine Parade Community Centre.

Her mother Madam Chua said she does not show Wee Ann the media interviews, also her daughter is probably too young to know what is happening.

Wee Ann's grandmother brought her along to Joo Chiat Teochew Opera for her singing practices when she was three. She would sit by the side and observe the practices, at the same time learning from the teachers.

The family discovered her talent for Teochew opera when she started correcting her grandmother's Teochew pronunciation and pointing out when she skipped lyrics in her singing. Wee Ann has a good memory, she can memorise the songs after listening to it twice.

A teacher decided to rope her in for a role in a Teochew opera performance. She learnt the scrip in two weeks and her Teochew dialect was impeccable. For a child who does not speak a word of Teochew at home, she is truly amazing.

Wee Ann enjoyed performing and is a natural in front of the camera. She made all those poses for me whenever I aimed my camera at her, I didn't have to tell her what to do.

I met Wee Ann's father and great grandmother, the 4-generation family loves Teochew opera. They are very supportive of Wee Ann's interest and would let her perform as long as she enjoys doing it..


新加坡年龄最小的潮剧演员吴委恩(4岁)小妹妹和妈妈蔡宛玲及外婆李炎珍一起参与潮剧表演。7月2日我去马林百列联络所观赏潮剧表演, 委恩和妈妈母女两人表演《桃花过渡》, 渡伯则由如切潮剧团新秀杨家胜扮演。

自3岁起学习潮剧的吴委恩, 是如切潮剧团年龄最小的潮剧演员。她记忆力很好, 潮曲听了两次就能记得。这个小不点儿在家里, 是一句潮州话都不会讲喔。

Guanyin Temple @ Tanjung Balai Karimun 丹绒巴莱吉里汶的三仙娘宫

Together with a friend, we went to Tanjung Balai Karimun for a short weekend getaway. On the morning of the second day, we went to a local Goddess of Mercy (Guanyin) temple as it was celebrating Bodhisattva's Leaving Home Day.

The men paid S$2 for incense offerings and offered prayers to the deity. Several local residents dropped by to pray too. Seeing me sitting in a corner, the friendly locals came to chit-chat with me. They speak Teochew too.

A young mother came by with a few T-shirts of her young children. She requested the abbot to put an imprint on the back of the T-shirts. The abbot took a wooden seal, thumped it a few times on a pad of red ink and pressed it hard on the T-shirts, a square imprint with Chinese characters was formed.

I was feeling emotional as it was a familiar ritual which my mother used to do for us when we were in primary school. It is believed the T-shirts blessed by the deity would ensure young children would grow up safe and healthy.

After prayers, we were treated to a scrumptious home cooked vegetarian meal by the abbot of the temple. The locals were hospitable and kept piling us with food and beverages. They probably felt honoured to have overseas visitors ... or maybe because we are kakinang (same dialect group). hahaha....

在丹绒巴莱吉里汶游玩, 在当地的三仙娘宫拜拜时, 一位年轻的母亲带了几件她年幼子女的T恤, 要求三仙娘宫的住持在T恤的背面盖印章。

住持拿了一个木制的印章，轻轻在红墨垫拍打了几次就印在T恤上，形成方形印记。据说这么做会保佑小孩平安, 快高长大。

我小时候, 我母亲也是这样子在庙里为我和弟弟们祈福。

Memorable Moments In Bangkok 难忘曼谷之旅

Whenever I travel to Bangkok with my hubby, the first and last place he would visit is the Erawan Shrine. Occasionally he would hire a troupe of traditional Thai dancers to perform in front of the shrine. Always packed with devotees from all over the world, many tour guides like to bring busloads of tourists here too.

Early every morning, we would see a row of monks sitting by the side of pavements and many Thais would respectfully kneel before each monk and offer them food. Some street hawkers sell ready packed food for the monks, the locals just buy the amount they required and offer them to the monks.

I couldn't resist entering this sweet Hello Kitty restaurant hahaha..... Actually we spent some money for refreshments just to take a few photos, but it seems my hubby enjoyed himself more than I do.

Pretty and cute decor, food is so so..... we had fun and enjoyed the silly photo shoots.

Chanced upon this authentic Thai dessert shop at Chatcuchak weekend market. Fascinated, we watched them make the pretty desserts. Bought some to try but they were too sweet for us.

At Chatcuchak weekend market, I would always seek out his guy. I have always enjoyed the tea pulling performance by this handsome guy. My hubby would tell you I would be gawking at the handsome guy every time. Look at the guy, which normal woman wouldn't!? (Ahhh, fortunately hubby didn't notice my saliva dripping..... )

His iced tea tastes better than the other stalls. Trust me  :D

Probably because we were on vacation, food in Thailand (even fast food) tastes great. At times, we would try new offerings on the menu of a certain fast food restaurant.

We have a to-eat list before going to Bangkok. When in Bangkok, before retiring to bed every night, we plan what to eat the following day. We pounced on every delicious food wherever we went. We were awed by a huge selection of yummy food everywhere, at any time in Bangkok.

Regrettably we would come back with a few kilos heavier. Resistance is futile. hahaha.....

We also had some memorable adventures looking for delicious food on the streets of Bangkok.

Late one night, looking for Thai Teochew kway teow soup (flat rice noodles) brought us to Mr Tan, a 2nd generation migrant from Chaozhou, China. All of us were glad to converse in Teochew, especially Mr Tan because his children only speak Thai.

A hardworking man who spends his life hawking noodles on the streets of Bangkok, he was very keen to learn about our life in Singapore and in Chaozhou. He has never travelled out of Thailand.

My hubby and I had a satisfying meal of Thai Teochew flat rice noodles. We also tried his recommendation of roast pork belly. Because we speak the same dialect, I think my bowl of noodles were laden with more ingredients. Kakinang mah.



旅游曼谷多次, 我有几个难忘的回忆。

每年我先生去曼谷拜四面佛时, 我会陪他去。他一下飞机就去拜四面佛, 要回国之前又去拜多一次。偶尔他会请传统泰国舞蹈员在四面佛前表演, 答谢佛恩。

偶然在Chatcuchak周末市场发现正宗的传统泰式甜点店。看着师傅们做甜点, 受不了买了一些回酒店吃。不过这些甜点也太甜了吧!?

我一直很喜欢这个帅哥拉茶。我先生会告诉你，我每次都目不转睛地盯着帅哥看。正常的女人都爱看帅哥嘛! 幸好老公没看到我流口水。。。 哈哈哈! 他的拉茶比其他摊位的好喝​​。我说的。

在寻找泰潮粿条汤时, 遇到摊主陈先生。我们用潮州话交谈。陈兄难得有人跟他讲潮州话, 乐得请我们喝茶因为他的孩子只会说泰语。

勤奋的陈兄一生在曼谷街头卖面, 从未离开泰国。他非常渴望了解我们在新加坡和中国潮汕的生活。我发现我的粿条汤好像有特别多食料。家己人嘛!

Singapore's Youngest Teochew Opera Performer 新加坡年龄最小的潮剧演员

A friend told me to look out for the youngest Teochew opera performer when I informed her I would be attending the Chinese Opera Grand Opening Festival.

The little girl is 4-year-old Goh Wee Ann from Joo Chiat Teochew Opera. She looked so tiny on the stage. Bright lights and a large audience in front of her did not faze her. Amazing that at her tender age, she does not have stage fright.

She charmed all of us with her performance of traditional Teochew opera.

I managed to "corner" her after her performance and coaxed her to pose for me. She is such a natural model, making several poses once I clicked my camera. I was smiling behind my camera. Others saw me snapping photos of her and started doing the same. That startled her and she ran to her maternal grandmother and hid behind her.

The strangers didn't seem to give up... one of my friends asked the grandmother for permission to have a photo with little Wee Ann. She requested my help to take a picture but after two clicks, little Wee Ann pouted and ran off. She was probably tired and too many people wanted to have a picture with her.

I was in the dressing room snapping pictures of the performers when I spotted Wee Ann and her mother Madam Chua who gladly posed for a photo together.

Madam Chua recalled that Wee Ann started learning and performing Teochew opera when she was 3 years old and she was still on milk bottle. Once a performance onstage had to be put on hold for a few minutes to wait for Wee Ann as she was having her feed backstage.

Little Wee Ann's grandmother revealed that her granddaughter doesn't speak Teochew but sings Teochew opera. Amazing. Wee Ann is such a charming performer, I wish her all the best and hope to see her perform more often.

自3岁起学习潮剧的吴委恩, 是如切潮剧团年龄最小的潮剧演员。6月18日,吴委恩粉墨登场饰演王宝钏, 为大家呈现潮剧《红鬃烈马》之《大登殿》。活泼可爱的吴委恩站在舞台上, 面对数百观众毫不怯场, 奉献出亮眼表现。喜爱与支持她的安哥安娣们给予她最热情的掌声与欢呼声。真棒!

爱好潮剧的外婆李炎珍几年前先加入潮剧团，妈妈蔡宛玲两年前也加入了潮剧团，后来轮到委恩, 三代同堂一起练习表演潮剧。从小接触传统华族文化的吴委恩，拥有与同龄小孩不一样的经验。

希望能看到吴委恩小妹妹更多精彩的演出。 加油！

Opera Grand Opening Festival 2016 人协百盛华族戏曲艺术节2016开幕典礼

This afternoon I attended the inaugural Chinese Opera Grand Opening Festival at Marine Parade Community Centre. Guest-of-honour ESM Goh Chok Tong received a special welcome by an entourage dressed in Chinese opera costumes. He also got to 'ride' in a wayang-style ancient 'carriage'. Mr Goh was very sporty, he made the actions of "boarding" and "alighting" the carriage. LOL

Minister for Social and Family Development Tan Chuan-Jin joined Mr Goh for tea before proceeding together to the 3rd level to view an exhibition on the history of Chinese opera in Singapore.

We were greeted by "Justice Bao" at the entrance. Visitors learnt about the different kinds of facial make up, painted faces and costumes for different personas in traditional Chinese operas. There was a display of "weapons" used in the performances.

Visitors could take photos or posed for pictures with performers wearing costumes which identified the various ranks, status and personality of their characters. 

Mr Goh and Minister Tan had fun at the opera face mask painting booth. They each painted a face mask, put it on and took photos of each other, much to the amusement of onlookers.

We have several foreign residents joined us. They had fun putting on Chinese opera costumes and having their pictures taken. A lucky mother and daughter posed for a picture with Mr Goh.

The visitors enjoyed the cultural treats prepared for them. Families with children were having fun painting and making crafts.

There was a long queue of ladies at a caricature drawing booth. The artist draws well, she worked non-stop and was exhausted at the end of the day with a sore right arm. Busy with picture taking, I failed to get a caricature of myself done. *upset*

I watched a short performance of a string puppet show. I would have loved trying on the opera costumes but I had to take photos of the event. *more upset*

The fan dance performance by a group of 35 children from Sheng Hong Arts Institute (Singapore) blew me away. They are really good, I wish I had my video recorder. I enjoyed their performance very much.

Love the colourful, magnificent costumes of Joo Chiat Teochew Opera group. On the right side of the stage was a screen where we could follow the lyrics of the opera with translated English subtitles. I was secretly laughing to myself as I read them ..... a funny idea crossed my mind.

This Joo Chiat Teochew Opera group has a gem that wowed the audience that day. To be continued......

Making Teochew Durian Ba Chang 裹潮州双拼榴莲肉粽

As Duan Wu Jie (Dumpling Festival) approaches, I began to miss my Mom's homemade Teochew ba zhang  (rice dumpling) . As I dislike those sold outside, I decided to make my own.

Our Teochew ba zhang is unique as it has two tastes - a delicious combination of savoury and sweet fillings. Making ba zhang is a most time consuming process, which explains why I rarely make my own rice dumplings.

What makes a Teochew ba zhang special is the red bean paste which is first rolled into a ball and then wrapped in caul fat. The thin layer of caul fat retained the shape of the red bean after boiling and won't disperse into a mess. Nowadays many dumpling makers do not use caul fat due to the scarce supply.

3 days before dumpling festival, I prepared the bamboo leaves and reed strings for the wrapping. Soaked glutinous rice overnight before frying it with seasonings. Yesterday I spent a whole day preparing the ingredients and making the dumplings. It was laborious work.

After seeing a fellow Teochew post his Teochew ba zhang with yam paste, I decided to try a different sweet filling - durian paste! hahaha.... yummilicious!!

The Sunday morning before the dumpling festival, I passed by a temple and saw many volunteers helping to make dumplings for the underprivileged and devotees. They were making hundreds of dumplings.

Salute to these volunteers for spending their Sunday making rice dumplings for the needy who are not forgotten during festive celebrations.

Brought my nephews to watch the dragon boat race at Marina Bay.

端午节总会想起小时候妈妈自己包的潮州双拼肉粽。好多年没吃了，忽然心血来潮, 自己动手裹潮州双拼肉粽。

单单咸粽子或甜粽子，吃多了容易腻。传统的潮州双拼肉粽馅料独特，一半甜，一半咸，一粽两味不容易腻。但咸甜双拼粽子做起来颇费工夫, 裹粽子的工序繁琐。

离端午节还有三天, 我准备竹叶和芦苇草  ~~ 洗净、晒干、浸漂。到了端午节前一日，一早就起来炒糯米、泡香菇虾米、浸栗子、煮红豆、捣豆沙、切花肉腊肠等。

我的馅料 : 糯米 (糯米先以五香粉、豉油、老抽等炒香)、肥豬肉（五花肉）、豆沙、腊肠、咸蛋、栗子、糖、葱花、虾米、香菇、猪网油（猪腹间的油膜）。现在外面卖的粽子都没有这么多料，只是放了必备的几样。

日前看到潮州老乡的帖子 ~ 芋泥双拼肉粽。我突发奇想 。。。 自制加了榴莲的潮州双拼肉粽。

一切准备就绪就开始裹粽子。包好的粽子，要在锅里煮上两个小时。

各位客官，请准备好纸巾，以免口水直流不止。好吃吗？甜滋滋又香喷喷的潮州双拼肉粽 。。。 食定正知! (这潮州话的意思是 : 只有吃了并且仔细品味以后，才真正知道它的好味道。)
