Salted Fish Fried Rice 咸鱼炒饭

Went marketing at Geylang Serai wet market and met a Teochew brother who owns a dried goods stall. After buying some dried chillies and pig skins, saw the lovely salted fish and couldn't resist getting a small slab of it.

I love salted fish. Thinking of what dishes I am going to cook with it makes me drool big time. One day, my son wanted fried rice so I made a salted fish fried rice and he finished the plate of rice (picture above) all by himself.

Salted Fish Fried Rice

300g of steamed white rice
a piece of salted fish fillet (4 cm by 2 cm) soaked for 10 minutes and diced
some shrimps (can use chicken meat or pork)
some bean sprouts
2 eggs
1 small onion (chopped)
2 cloves garlic (chopped)
red chilli and spring onion for garnishing
fish sauce
pepper

Method :

Fry an omelette and cut it into small pieces.

Heat 2 tbsp oil in wok, add chopped onions and stir-fry until onions turn translucent, push it to one side of the wok, then fry the garlic. Before garlic browns, add the diced salted fish to fry for 3 minutes, then add the shrimps, bean sprouts and steamed rice. Toss to mix the ingredients well and stir fry for 3 minutes.

As the preserved fish is salty, taste the rice first before adding in the seasoning.

Add the egg, fish sauce and pepper. Stir fry for another 1 minute before serving.


那天在芽龙士乃巴刹遇到一位卖干粮的潮州宗亲, 就向他买了一些干粮和一片咸鱼。接下来的日子, 随时都可以用咸鱼做菜。这天儿子要吃炒饭, 刚好家里有隔夜饭, 就做了这道简单的咸鱼炒饭。

家里有隔夜饭的话, 我不会浪费它, 最常做的不是炒饭就是煮粥了。而让我们母子百吃不厌的家常美食就是咸鱼炒饭。

喜欢这道炒饭, 可能与我喜欢咸鱼有关, 制作方法也简单。每当吃到咸鱼时,原本味道普通的炒饭顿时会变得又咸又香哦。
