Apple with Salted Prune

When my spouse was injured and given three days' medical leave, several friends came to visit, bringing apples or fruit hampers. The Advisor to Mountbatten constituency Mr Lim Biow Chuan and grassroots leaders sent a fruit hamper too.

For the Chinese, it is courtesy to bring fruits when you visit a patient or someone in their house. We are very happy to receive the gifts.

But when the fruits keep accumulating, I have to think of ways to consume them or else they would spoil. For oranges, I would slice them and add to our drinking water or make orange juice.

But I have too many apples, besides juicing them, making apple pies, salads or refreshing apple drinks, I make this appetising snack often.

Ingredients :
6 - 8 apples (green or red or a combination)
some preserved salted prunes (according to your taste)
2 tablespoons lemon vinegar or vinegar
2 tablespoons light muscovado sugar
2 - 3 sliced red chillies (optional)

Method :
1.   Peel and cut apples into slices or cubes.

2.   In a container, put in whole or sliced preserved salted prunes, sugar and           vinegar, mix well. If you like a spicy salad, you can add sliced red chilli.

3.   Put the box of apple in the fridge for an hour before serving.
