Eastcoastlife's Homecooked Hainanese Curry Rice 新加坡海南咖喱饭

Family members requested for Hainanese Pork Chops and Chap Chye (mixed vegetables). As I was buying the ingredients to cook them, I thought why not cook a Hainanese Chicken Curry so they can pour the curry over their rice.

The traditional Hainanese Curry Rice must consist of these three dishes.

Hainanese Chap Chye (mixed vegetables)

My family members, young or old, love this dish. I didn't cook a vegetarian version because I added crispy pork skin. This dish goes well with porridge too.

Hainanese Pork Chops

I use pork shoulder butt and cream crackers to make this delicious pork chops. I had left the marinated meat for three days in the fridge because I was busy, it absorbed the marinade and came out flavourful.

Hainanese chicken curry

The curry is specially for pouring over steamed white rice. I added gula melaka (palm sugar) and evaporated milk.

Besides the three dishes above, there was a fried egg, braised pork, braised tau pok (dried beancurd puffs) and braised pork skin.

He poured two types of gravy over it - curry and dark soy sauce braised meat gravy.

I am a Teochew, so I always have a pot of braised pork at home. We love to pour the gravy over steamed rice or porridge. *smile*


家里的男人对海南咖喱饭念念不忘,他们最喜欢整盘饭淋满咖喱汁的了。老公就喜欢淋上咖喱和卤汁。

我身为潮州人, 家里怎能没有卤味? 哈哈哈 。。。 海南咖喱饭的特色就是把咖喱汁和卤汁参在一起吃,但是吃起来却不会觉得怪怪的。

传统海南咖哩饭必备的菜肴 ~ 海南咖喱鸡、海南炸猪排、海南杂菜、卤汁卤味(卤肉、卤蛋、卤豆干、卤豆卜)。
